Маковые коржики

Ингредиенты: 

100 г зернышек мака 

100 г сливочного масла

100 г сахара 

150 г сметаны или жирного кефира или йогурта 

1/4 ч.л. соды 

350 г муки + мука для раскатки теста 

Способ приготовления: 

1. Зернышки мака нужно обязательно растереть, помолоть в кофемолке или измельчить в блендере. Я воспользовалась ступкой, предварительно замочив мак в небольшом количестве кипятка. Растирать мак нужно с небольшим количеством сахара, пока он не начнет светлеть и выделять белый сок. Это не совсем лекая процедура, но дальше все уже будет очень просто. 

2. Включите духовку и разогрейте ее до 200 градусов. Мягкое сливочное масло растереть лопаткой с оставшимся сахаром (часть сахара должна уйти на растирку мака).  

3. Добавьте сметану или другой кисломолочный продукт. Я взяла 100 г сметаны и 50 г закваски. Добавьте к маслу с сахаром, перемешайте венчиком. Добавьте перетертый мак, перемешайте еще раз. Муку смешайте с содой, добавьте в тесто. 

4. Хорошо присыпьте рабочую поверхность мукой, выложите на нее тесто, сверху тоже присыпьте мукой. Тесто получается не плотным, его даже не раскатаешь скалкой. Просто приплюсните руками до состояния плоской тонкой лепешки. Вырежьте печеньки или просто нарежьте квадратиками. 

Выпекать на пергаментной бумаге или специальном коврике 15 минут.
