Тайский кокосовый суп с карри

Ингредиенты (4 порции)

Грибы шиитаке5 штук
Лайм1,5 штуки
Кокос3 штуки
Имбирь тертый1,5 чайные ложки
Масло оливковое100 мл
Сок лайма2 столовые ложки
Финики3 штуки
Соль морскаяпо вкусу
Лук зеленый3 штуки
Соус соевый неферментированный1 столовая ложка
Чеснок2 зубчика
Карри1 чайная ложка
Перец чили молотый1 чайная ложка

Способ приготовления (30 минут)  
1. Маринуйте шиитаке в соке 0,5 лайма и щепоткой соли. 
2. В блендере измельчите мякоть кокосов и смешайте с молоком 1 кокоса до мягкой консистенции. 
3. Добавьте имбирь, сок 1 лайма, оливковое масло, финики, соль, соевый соус, чеснок, карри и чили. Все тщательно измельчите и взбейте до мягкого состояния. 
4. Достаньте грибы из маринада. Добавьте в суп с нарезанным зеленым луком. 
5. Аккуратно нагрейте суп до теплого состояния.
