Ингредиенты  (4 порции)

Свекла                                       2 штуки
Руккола                                       4 стакана
Сыр козий                                ½ стакана
Орехи грецкие                          ? стакана
Масло оливковое extra virgin       ¼ стакана
Лимоны                                       ? штуки
Горчица сухая                          ? чайной ложки
Сахар                                       ¾ чайной ложки
Соль                                       по вкусу
Перец черный молотый             по вкусу

Способ приготовления

1. Отварите 2 среднего размера свеклы в кипящей воде до мягкости, примерно 1 час. Охладите, очистите и нарежьте тонкими полосками.
2. В небольшой миске смешайте оливковое масло, сок лимона, горчицу, сахар, соль и перец, перемешивая, до растворения сахара.
3. На тарелки выложите рукколу, сверху кусочки свеклы и козьего сыра. Посыпьте слегка измельченными орехами и сбрызните заправкой.
